It is the blend predominantly of the classic Tuscan varieties of Leccino, Frantoio and Pendolino grown in the particular soil and climate of the Geographe region in the south west of Western Australia.
The fruit was harvested when ripeness was optimal to produce a balance between the olive fruit flavours and the polyphenols, or natural anti-oxidants. As a result the oil has a fresh grassy aroma and flavour with moderate bitterness.
