Nick Raven uses a small batch 5kg roaster on view in his raw foods café in Denmark. Beans chosen for roasting are all specialty grade, traceable from the producer and ethically traded. This month Ravens have choosen two roasts; organic Bolivian produced by eight families of the San Juan Ocho Estrellas community and a Seasonal Espresso Blend containing Caxambu Estate from Southern Brazil and Emporium Estate from Panama.
