Fremantle Sardine Company

Almost every morning when most of us are still tucked up in bed Jim Mendolia and his crew are chasing sardines in and out and around the ships at anchor in Gage Roads just off Fremantle. Jim has combined the knowledge of his father’s traditional European processing and curing methods and his own ingenious inventions to produce a world class product.

Expect some new products on the market soon as Jim cranks up the canning machine once more. I can’t wait to taste the Auschovies again, an anchovy-styled sardine fillet.
