Chris Vogel is of Swiss decent and luckily for us he purchased a dairy farm near Denmark in 1993. Since then he has gone about steadily increasing his cheese making knowledge and and now makes both soft cheese (camembert and Brie) and semi hard washed rind cheeses. The Camembert is lush, delicate and silky – please serve at room temperature with a crusty baguette, some slices of pear or apple and a handful of walnuts.
